Soaking potatoes to lower the potassium:

  • Peel vegetables and thinly slice. Rinse. Place vegetables in a pan of warm water, using at least five times more water than vegetables.
  • Soak for at least two hours. Drain and rinse vegetables. Fill pan with water again, using five times more water than vegetables. Cook, drain and discard cooking fluid.
  • Potatoes that have been soaked this way can be fried, mashed, scalloped or put in soups or stews.
